A refreshing watermelon and chia seed beverage with lime juice and honey. The soaked chia seeds create a pleasant chewy texture and add fiber, healthy fats, and protein to this hydrating drink that's perfect for quenching thirst while breastfeeding.

    In a small bowl, combine chia seeds with 1 cup of water and stir together. Set in the fridge to begin the gelling process. In about 30 minutes or so, whisk thoroughly until you've broken up any chunks and the seeds are well distributed in the water. Put back in the fridge and let sit for 2 to 3 hours or overnight.

    When you're ready to make the cooler, place the watermelon, lime juice, and honey in a blender and blend until liquefied.

    Pour the watermelon juice through a fine sieve and catch the juice in a bowl. Swirl watermelon mixture around the sieve to get as much juice as possible to drip through, but leave any watermelon pulp behind in the sieve.

    Transfer the watermelon juice from the bowl to two glasses or jars. Add 1/2 cup of the soaked chia seeds to each glass. Whisk again to distribute the seeds throughout the juice. Enjoy cold. The cooler will stay fresh in a lidded mason jar in the refrigerator for 2 to 3 days.
