    Place all the ingredients plus 1½ cups of water in a medium-size pot. Whisk together until there are no clumps of coconut milk and the chia seeds and rice are evenly distributed.

    Bring the mixture to a boil, and then cover the pot with a lid and lower the heat to low.

    Simmer over low heat until most of the liquid is absorbed and the rice is softened, about 1 hour, giving a brief stir once or twice throughout to prevent sticking.
