Instructions
- 1
Slice the chicken thighs into bite-sized chunks perfect for skewering. (Think "one bite = one flavor explosion.")
- 2
In a large bowl, combine the seasonings, brown sugar, 2 tbsp sweet chili sauce, and 2 tbsp mayonnaise. Toss the chicken chunks in the marinade. Cover and refrigerate for as long as you can wait - 30 minutes to 12 hours.
Timer: 30m - 3
Preheat your air fryer to 390°F (200°C). If you're using wooden skewers, soak them in water for 30 minutes to avoid an accidental BBQ reattachment in your air fryer. Skewer the chicken chunks.
Timer: 30m - 4
Place the chicken skewers in the air fryer basket and cook for 12-15 minutes, flipping halfway. The chicken should be crispy and juicy, but cooked through.
Timer: 15m - 5
While the chicken is cooking, whisk together 4 tbsp mayonnaise, 2 tbsp Thai sweet chili sauce, 1 tbsp sriracha, minced garlic, lemon or lime juice, black pepper, and fresh parsley. This is the magic sauce.
- 6
Melt 1/4 cup of butter in the microwave and mix it with 1 tbsp fresh parsley. Baste the chicken skewers with the butter. Then, lather them with the Bang Bang sauce for that sweet finish. Top with green onions and serve over a fluffy rice!
