Cheesy Chipotle Chicken Quesadillas
A quick and easy comfort food quesadilla recipe featuring shredded rotisserie chicken coated in a flavorful homemade chipotle sauce. Make the chipotle sauce: In a blender, combine the chipotle peppers in adobo sauce, honey, vinegar, lime juice, garlic powder, cumin, and salt. Blend until completely smooth and no chunks remain. Set aside.

Make the chicken filling: In a medium skillet, combine ½ cup of the chipotle sauce, the shredded rotisserie chicken, and 1¼ cup water. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally, until the chicken is heated through and well coated in the sauce. Set aside.

Make the chipotle aioli: In a small bowl, whisk the mayonnaise with 1 tablespoon of the chipotle sauce until well combined. Set aside.

Cook the quesadillas: In a large skillet, melt 1 teaspoon of the butter over medium heat. Spread 1 teaspoon chipotle sauce in the pan. Place a tortilla on top of the sauce. On one half of the tortilla, layer ⅓ cup chicken filling, 3 tablespoons mozzarella, and 2 tablespoons pico de gallo.

Drizzle additional chipotle sauce over the filling to taste. Use a spatula to carefully fold the tortilla in half and press down to close. Cook for 2 to 3 minutes on each side, until golden brown and crispy. Repeat with the remaining tortillas to make 6 quesadillas.
