Instructions
- 1
Prepare the corn ribs by cutting each corn ear in half lengthwise, then cut each half in half again lengthwise to create thin rib-like pieces. Pat them dry with paper towels.
- 2
Preheat your grill to medium-high heat (about 400°F or 200°C).
- 3
Brush the corn ribs with melted butter on both sides and season with salt and black pepper.
- 4
Place the corn ribs on the grill, cut-side down, and grill for about 5-7 minutes until you see nice char marks. Flip and grill the other side for another 5-7 minutes until tender and lightly charred.
Timer: 7m - 5
Remove the corn ribs from the grill and place them on a serving platter.
- 6
Drizzle the crema evenly over all the corn ribs.
- 7
Sprinkle the crumbled cotija cheese over the top.
- 8
Mix together the chili powder, lime juice, and chopped cilantro. Sprinkle this mixture over the corn ribs.
- 9
Serve immediately while still warm, with extra lime wedges on the side for additional flavor.
