Chopped Cheese Sliders
Classic NYC-style chopped cheese sandwiches reimagined as sliders. Seasoned ground beef is topped with melted sharp Cheddar cheese, crisp lettuce, juicy tomato slices, and a tangy sauce made with mayonnaise, ketchup, and sweet relish. Preheat the oven to 350°F. Line a 9 × 13-inch baking dish with parchment paper.

Make the beef-cheese topping: In a large skillet, heat the oil over medium heat until hot and shimmering. Add the onions and cook, stirring occasionally, for about 7 minutes, or until soft and translucent.

Add the beef and cook for about 5 minutes, breaking it up with a spatula as it cooks into small pieces, until it starts to brown.

Stir in the Worcestershire sauce, garlic powder, onion powder, seasoning salt, adobo seasoning, and kosher salt. Reduce the heat to low and cook for another 5 minutes, stirring occasionally, until the beef is browned and cooked through.

Add the Cheddar and stir for 1 minute, until the cheese is melted and fully incorporated. Remove from the heat.

Assemble the sliders: Slice the slider rolls in half horizontally to separate the tops of the rolls from the bottoms. Place the bottom halves of the rolls in the lined baking dish.

Evenly spread the meat mixture over the bottom halves of the rolls. Sprinkle with the Cheddar.

In a small skillet, melt the butter over medium heat. Stir in the Italian seasoning, then brush the tops of the slider buns with the seasoned butter and place them on a baking sheet.

Place the baking dish with the meat-topped buns and the baking sheet with the buttered tops in the oven. Bake for about 5 minutes, or until the cheese is melted and the tops are slightly toasted.

Meanwhile, make the sauce: In a medium bowl, whisk together the mayonnaise, ketchup, sweet relish, and Cajun seasoning. Set aside.

To serve, sprinkle the lettuce evenly over the top of the cheesy beef mixture. Set 1 slice of tomato on top of each roll.
