Instructions

Step-by-step guide
  1. 1

Cut the sweet potato into medium chunks, leaving skin on. Put in a microwaveable bowl with the lime halves and 1 tablespoon of water. Cover and zap on high for 10 minutes until completely soft.

  2. 2

Meanwhile, finely slice the garlic, spring onions, coriander stalks and red pepper. Keep some of the sliced spring onion to one side.

  3. 3

Melt the butter in a frying pan over a medium heat. Scrape in the veggies along with a pinch of salt and pepper. Cook stirring almost constantly, for 4 minutes until the peppers are soft, then sprinkle over the Cajun seasoning and chuck in the prawns. Cook for 2-3 minutes. The raw grey colour of the prawns will turn pink, which shows you they are cooked.

    Timer: 4m
  4. 4

Turn down the heat to low to keep the prawns warm, and come back to your sweet potato. Carefully uncover and, using a fork, squeeze out the juice from the lime. Season with salt and pepper, roughly mash.

  5. 5

Pile the mash into a bowl. Spoon over the Cajun prawn mix, finish with a scattering of coriander leaves and the remaining spring onion.
