A delicious Cajun-inspired seafood dish featuring pan-seared king prawns coated in Cajun seasoning, served alongside a creamy lime-infused sweet potato mash. The prawns are cooked with aromatic vegetables including garlic, spring onions, and red pepper, while the smooth sweet potato mash is brightened with fresh lime juice and coriander, creating a perfect balance of flavors and textures.

    Cut the sweet potato into medium chunks, leaving the skin on. Put in a microwaveable bowl with the lime halved and 1 tablespoon of water. Cover and zap on high for 10-12 minutes until completely soft.

    Meanwhile, finely slice the garlic, spring onions, coriander stalks and red pepper. Keep some of the sliced spring onion to one side.

    Melt the butter in a frying pan over a medium heat. Scrape in the veggies along with a pinch of salt and pepper. Cook, stirring almost constantly, for 4 minutes until the peppers are soft, then sprinkle over the Cajun seasoning and chuck in the prawns. Cook for 2-3 minutes. The raw grey colour of the prawns will turn pink, which shows you they are cooked.

    Turn down the heat to low to keep the prawns warm, and come back to your sweet potato. Carefully uncover and, using a fork, squeeze out the juice from the lime. Season with salt and pepper, roughly mash.

    Pile the mash into a bowl. Spoon over the Cajun prawn mix, finish with a scattering of coriander leaves and the remaining spring onion.
